For hermes, according to the guide, i just have to talk to him with a maxed out plume equipped,. Artemis is the greek goddess of the hunt. There is actually an issue preventing progress in aphrodite's heart track that's likely a 50/50 bug due to an issue with one of her earlier friendship conversations. For me, she started talking about callisto before i had the 6th heart from nectar.
You have to either clear or die. Your best bet is to just equip her keepsake. You need to see them all, so just keep talking to her and it should pop up naturally through gameplay. Mild spoilers for the rest:

Artemis' affinity gauge maxes out at 7 hearts, requiring the gifting of 6 nectar and 1 ambrosia.
Hey, there is a bug with zeus' affinity gauge currently, preventing it from being unlockable, which will be fixed in our next patch. Her boons revolve around improving zagreus’ attack and chances to inflict critical damage; Artemis requires just talking to her a bunch. I have escaped, completed the epilogue, escaped 28 times, caught over 115 fish, maxed out poseidon's keepsake and yet i just cannot get his heart to unlock!
Favor [] artemis' favor requires seeing multiple strings of dialogue in which she talks about her. In all my googling, once she starts talking about callisto, you unlock it. At the end of her dialog about calisto, the heart unlocks. Is it too late for me to unlock it?

Not 100% sure zeus and artemis are on the list, but if you see a key on a heart it means you need to spend ambrosia on them. Unlocking artemis’ heart hinges on specific dialogue triggers, requiring patience and persistence. This will be an exhausting ordeal, but it is doable. I heard a friend mention he.
Hermes requires you to max the plume and bring it to him. No way i know to trigger it, but you could equip her keepsake and go on suicide runs to exhaust her dialogue faster. Restarting a run will not count toward progressing any relationships; The lock means that you have to reach a certain.
